What is the best human strategy for the one on one orc matchup? And what is a good all-around human hero?

Against an Orc, they will probably try to farseer rush you and then upgrade to tier2 while having a sizable standing army of Grunts. Once at tier2, they'll either go Gruntapult (Grunts + Demolishers) or add in Wyverns and harass you while expanding/creeping. Lately, the former has been used a lot, with a kodo beast or two added in to devour riflemen, knights, and spellbreakers.
As a Human, your best option is to get an arcane tower quickly to stop FS harass with wolves, then tech to tier2 quickly for sorceresses. Slow hurts Orc A LOT. Your army will be a few footmen to hold off early grunts and act as a meatshield for an army of riflemen that will be produced with you tech to tier2. Add Knights in later on and switch to gryphons instead of riflemen if they go with a large grunt or tauren force.
An alternative strategy is to fast tech to tier3 with 2 gryphon aviaries and mass gryphons + dragon hawks. Orcs have trouble against mass air, especially when you can shackle and kill all the batriders with dragonhawk riders. The only problem with this strat is that a Gruntapult attack with some AA support before you have much air will completely decimate you.
For heroes, I'd recommend the Archmage with Water Elementals. The ranged damage and extra HP for a meatshield is really helpful against grunts early game. A Bloodmage with Banish (target grunts) and Siphon Mana (target hero) is also useful, as taking one or two grunts out of a battle is a huge benefit, as is reducing the amount of AoE spells the Orc heroes cast (especially if they get a tauren chieftan) and wolves that are summoned. His phoenix is also very powerful later on, as it does large amounts of magic damage. A mountain king with Stormbolt is good early on to catch retreating grunts, but can't do all that much early game to defend an attack because of his limited mana.

the bm is the best human hero, with the paladin follwing closely in second, anyway teh flamestrike from the bm is the most effective ranged ground unit killer in the game now that the archmage has a 5 unit cap or w/e that new restriction it is

My tactic is to mass footmen(meat sheild)/riflemen(punch power)/priests(rifle die stoppers)+seige engins(building destroyers)/dragonhawks(building destroyers guardians)

I tend to start off with a paladin, as his Holy Light and Devotion aura are great early game.

AOE and more AOE against UD. Haha ^^
