Assuming you had infinite money/time, what armies would you collect? I would definitely get a tomb kings army with lots of chariots and ushabti. From 40k I would get a witch hunters army as many vechiles and seraphrims as possible, load everything up with flamers and charge my army into the thick of things while exorcists do lots of fire support.
I'd also like to collect an army themed as rogue traders. I'd make them appear as humans but use an eldar codex, model them with a mix of technologies and design mechs for models any stronger than a normal trooper.
I'd like a plain old eldar force except I would base the army entirely of swooping hawks, all models would be converted to swooping hawks even though a few of them would be actaul swooping hawks, I'd give all the rest of my army wings and choose flying or hovering units only.
Well for a start I would change my IG entirely to cadians (its a horrible mix of Cadian, valhallan and catachan at the minuite) and possibly mechanise them.
Probably for 40k I'd necron one up, because they look cool.
Fantasy battlewise I'm reasonably happy with chaos but if I had to it would probably be an empire army based on Napoleon's Grande Armee, lots of handgunners, cavalry and cannon
Battlefleet Gothic: Hmm, tough choice but possibly Eldar.

I'd Get my nid army up to snuff
then get a Tau
then grab a lizardmen.

Well, I'd get an Imperial Guard army, probably Catachans. Then I would get a Tyranid army. Then Orks.

1.) "Inquisitorial" army with a...allies. Lots of them.
2.) A fantasy Empire army. With guns. Lots of them.

I'd love to model a massive battleground of a small group of Grey Knights and Puritanical Inquisitors fighting a huge swarm of 'Nids, or possibly heretical IG.
Also, pitting an army of Tau rangers with longrange broadside/shipboard backup against a bunch of orks would be interesting.
On the 'Rogue Trader' note, I'd love to run an amalgam (using Inquisitor rules) of IG and Space Marines as 'Pirates'.
As for fantasy? Wood elves! Battlefleet? 'Nids! (I've always loved the idea of living ships)
For fantasy id say those rat people, Skaven :P
For Sci-Fi, id say Imperial guard :P

For BFG I would choose a Chaos army, because I like a tough army with relatively few models and lots of personality. I always attach emotional links with things so that is much more fulfilling to do with lets models which are more characterful.
BFG and tough? Thats not chaos
Imperials get the hardness in battlefleet.
Theres a point, does anyone other than me here actually play Battlefleet Gothic? (I say play, I have 2 cruisers and a big box of lego to improvise the rest with...) Or is it almost completely unsupported for a reason?

Yes I know that imperial navy are stronger, and I thought I said why I didn't choose them in my post. It is because imperials aren't as characterfull/unique, they just all look like metal tubes and you have to try really hard to give them a unique history or personality. Chaos is fast, long ranged and relatively reliable.
Sorry, my mistake. Chaos are pretty fun to play though.
I suppose an Apocalypse size army for almost all races would be nice.
Yes, even Dark Eldar.

I suppose Tau and Space Marine armies would be fun to collect. Not much of a fan of the other armies. Oh, and Chaos.
Warhammer Fantasy? Hordes of Chaos are go.
Battlefleet Gothic? Imperial Navy ftw.
hmm, since most of my exp. is with Space Marines, id just get an army Terminatores

Seeing the new adeptus mechanicus models for battlefield gothic has renewed my interest in making a 40k Adeptus mechanicus army, probably using space marines as a base. But that will never happen, I am quite interested in renewing my chaos army, once I get the new codex, probably either a thousand sons army if they are better in this one or a deathgaurd army, assuming they are still good. I have a few ideas for modeling a deathgaurd hero.
