There's still the occasional term for damage that I come across in D2 which I don't know the meaning of.
These include deadly strike and crushing blow, but I'm sure there are others... what do these attributes do and are there any others I don't know about? Ones like 'Open Wounds' for instance, which makes a monster bleed uncontrollably. How much damage does OW do, anyway?

Right, so it wasn't as easy to find as I thought it would be, here's the direct link (at the bottom of the page):

Open Wounds damage is based of your level (somewhat, afaik), but is basically like poison. Its very useful in duels, but I've found it somewhat useless in pvm (it deals damage over a set amount of 'time' (time in diablo is "frames")
Err. Anyways, curshing blow on a melee attack will take away 1/8th of a boss's current hp -- basically it acts like Static, however, it continues to work past the half way mark (ie: in hell). It is reduced to 1/16th on ranged attacks, etc...
Most of this explained there, but this is just a summary.
FYI: Deadly Strike just doubles the damage you do, it is LIKE critical strike, but they do not stack.

This page should answer most of your questions.

FYI: ds and cs do stack, but not on a 1:1 ratio.

They don't stack... You can't get a deadly strike and a critical strike. However, if you fail to get one, you can still get the other. So say you have a 50% chance of both deadly strike and critical strike. You get a 75% chance of inflicting double damage instead of having 50% chance of double and 25% of quadruple damage.
