The best way to become better at the game is to play against other people, especially on the Battle.net ladder.
For Orc strategies, there is a pretty good thread here (http://www.warboards.org/showthread.php?t=2116).
Human strategy requires a bit of adaptation to your opponents strategies and races, and isn't as clear-cut as the Orc ones are. The main Human startegies that I see are:
1. Mass Footmen/Riflement rush
2. Riflemen + Casters
3. Mass Gryphons/ Dragonhawks.
For the mass footman and rifleman rush, you'll want to have 2 or 3 barracks. Don't worry about teching or upgrades. Just creep in order to get levels for your hero. Once you have about 50 supply worth of units, attack your opponent. Hopefully he will have tried to tech and will have less units, allowing you to overwhelm him. The problem with this strategy is that it needs good timing. If you're too late, your opponent will have more powerful units that can stop you. If you attack too early, you won't have enough units to win a battle.
The most common and most generalized strategy is riflemen with spellcasters (priests and sorceresses). You'll want 1 barracks early on (maybe a second later) and you'll want to upgrade your town hall to a keep after you have 10 or 11 peasants. Train some early footmen to help defend and creep, and then switch to producing riflemen. Once your keep is finished, get an arcane sanctum and use it to produce sorceresses and priests. Once you have a decent amount of spellcasters and riflemen, try to attack your opponent. The sorceresses will slow his army, making it easier to kill, and your priests will heal your riflemen. Try to pull back injured riflemen so that they're no longer attacked and can be healed. You may want to add spellbreakers if your opponent is using spellcasters, and Knights later on when you have them.
The mass air strategy is taking a chance but usually pays off well if you can get it to work. You'll want to tech to a castle as fast as possible, with a minimum force of footmen and riflemen. Get 2 aviaries when you have a keep and start making dragonhawks. Once you have a castle, you should have a decent amount of dragonhawks and you can switch to gryphons. They key to winning with this strategy is to focus fire enemy units - have a lot of your units attack one of theirs all at once - or heroes. If you can get rid of their anti-air units (if they don't have many) and heroes, you've dealt them a serious blow, as they won't have much to defend against you. However, you need to keep pressure on them, or they can rebuild and get more and better anti-air units.
